Does honey ever go bad?

Quick answer

Pure honey stored in a sealed container practically never spoils, and can remain edible for thousands of years. It’s very low in water, acidic, and contains natural hydrogen peroxide, which together stop bacteria and mold from growing. Archaeologists have found pots of honey thousands of years old in ancient tombs.

Why honey doesn’t spoil

PropertyEffect on microbes
Very little water (about 17–18%)Sugar draws water out of bacteria, drying them out
High sugarCreates a “hostile” environment
Acidic (pH about 3.5–4.5)Most bacteria can’t survive
Hydrogen peroxideMade by an enzyme bees add, glucose oxidase

Bees help by fanning nectar with their wings to evaporate water before sealing it with wax.

Ancient honey

Honey has been found in Egyptian tombs, reportedly still edible. In 2003, archaeologists in Georgia (the country) found honey residue in clay jars about 5,000 years old, among the oldest ever discovered. Honey was also used in ancient medicine to dress wounds.

Crystallized honey is still good

Honey often turns solid and grainy over time. This is crystallization, not spoilage: the glucose naturally forms crystals. To make it runny again, place the jar in warm (not boiling) water and stir.

When honey can go bad

  • If water gets in, for example from a wet spoon, honey can ferment.
  • Honey kept open can absorb moisture from the air.
  • Some products sold as honey are mixed with syrups, which may not last as well.

Storage tips

  1. Keep it in a sealed jar.
  2. Store at room temperature, away from heat; refrigerating speeds up crystallization.
  3. Use a clean, dry spoon.

Its color and flavor may slowly darken over many years, but properly stored pure honey stays safe.

An important safety note

Health authorities advise not to give honey to babies under 12 months, because it can contain bacterial spores that cause infant botulism, a rare but serious illness. Older children and adults are protected by their mature digestive systems.

Honey is made by honeybees, who communicate with a dance; see which insect performs a waggle dance. Honey is often used in sweets such as marzipan.
